Ingredients
4 eggs
160 gr. self raising flour of
100 gr. olive oil
150 gr. milk
1 tbsp baking powder
100 gr. yellow cheese, grated
180 gr. white tuna spicy in sunflower oil, Alelma
200 gr. canned corn rinsed and drained or frozen;
1 onion, chopped
1 orange bell pepper, chopped
1 red pepper, chopped
1 tbsp mint, dried
½ tbsp. oregano
salt, to taste
pepper, to taste

EXECUTION
1 | Preheat the oven to 180°C. |
2 | In a non-stick pan, add 2 tbsp. olive oil. Add the onion, oregano and saute. As soon as the onions start to turn golden, remove the pan from the heat and transfer the onion to a plate lined with absorbent paper. |
3 | Crack the eggs into a large bowl and beat with a hand mixer until fluffy. |
4 | Add the milk and olive oil and mix with a wooden spoon. Add the flour and baking powder and mix very well until you have a dough. |
5 | Add the tuna in pieces, the corn, peppers, cheese, mint, salt and pepper. We also add the onion and oregano. Mix with the wooden spoon until the ingredients go into the whole mixture. |
6 | Pour our mixture into a buttered and floured form. If necessary, shake the mold until the mixture is well spread. |
7 | Bake in the preheated oven for 45 minutes. |
We serve our cake after we have let it cool enough so that it does not dissolve. |
