QUICK QUESADILLAS WITH TUNA AND CORN

INGREDIENTS

200 gr. albacore tuna in extra virgin olive oil, Alelma

300 gr. cheddar, grated

150 gr. corn

1 red onion, chopped

1 green pepper, chopped

1 tbsp black olives, pitted and sliced

3-4 tbsp. yoghurt

2 tbsp mustard

1 tbsp paprika

1/2 tsp. white pepper

salt, to taste

4 tortillas, large

EXECUTION

1In a large bowl, add the corn, red onion, pepper and olives. Mix very well.
2In a smaller container, add the yogurt and mustard and mix very well. Add our sauce to the prepared vegetables and mix.
3In another container, add the cheese and the tuna and mix very well, until our tuna breaks up very well.
4Season with paprika, white pepper and salt and then add the lemon juice. Mix until smooth.
5In a large pan, add our tortillas one by one and fill them with the cheddar and tuna mixture. Bake for 1 minute, until our cheese melts and spread 2 tbsp. from the mixture with our vegetables.
6Fold in half and continue baking until our quesadillas are golden brown.
7Serve before they cool.
