INGREDIENTS
200 gr. albacore tuna in extra virgin olive oil, Alelma
300 gr. cheddar, grated
150 gr. corn
1 red onion, chopped
1 green pepper, chopped
1 tbsp black olives, pitted and sliced
3-4 tbsp. yoghurt
2 tbsp mustard
1 tbsp paprika
1/2 tsp. white pepper
salt, to taste
4 tortillas, large

EXECUTION
1 | In a large bowl, add the corn, red onion, pepper and olives. Mix very well. |
2 | In a smaller container, add the yogurt and mustard and mix very well. Add our sauce to the prepared vegetables and mix. |
3 | In another container, add the cheese and the tuna and mix very well, until our tuna breaks up very well. |
4 | Season with paprika, white pepper and salt and then add the lemon juice. Mix until smooth. |
5 | In a large pan, add our tortillas one by one and fill them with the cheddar and tuna mixture. Bake for 1 minute, until our cheese melts and spread 2 tbsp. from the mixture with our vegetables. |
6 | Fold in half and continue baking until our quesadillas are golden brown. |
7 | Serve before they cool. |
